Must Have Cookbook
It’s not often that I find a REALLY GOOD cookbook! However, a friend of mine introduced me to “Church Suppers.” They have so many yummy recipes in it. I made one the other day called “Chicken Spectacular.” The only thing I would have done differently was used diced chicken instead of shredded chicken. I’ve had it both ways and think the diced way is better – it’s a texture thing.
Here’s the recipe:
3 cups cooked chicken, diced
1 can French green beans, drained
1 package wild rice, cooked (I used the Uncle Ben’s boxed wild rice)
1 can cream of celery soup
1/2 cup mayonnaise
1/2 cup water chestnuts
2 tablespoons pimientos
1 medium onion, chopped
1 1/2 cups Cheddar cheese, shredded (I used closer to 2 or 3 cups of cheese)
Salt and pepper to taste
Paprika (note: I didn’t use any because I didn’t have any and it was still good)
Preheat the oven to 350 degrees. Combine all the ingredients (use a large bowl) except the Paprika. Place in a 3-quart buttered casserole. Sprinkle the paprika on top. Bake for 45 minutes to 1 hour until the top is slightly browned. Enjoy!
