Red White and Blue Mixed Berry Trifle Recipe

Memorial Day is just around the corner and not only is it a day where we remember and thank those who have served our country, but it’s also a fun reason to create festive recipes to enjoy for the holiday! In our home, we love berries – strawberries, raspberries, blueberries and blackberries. Whether it’s eating them in ice cream, pie or by themselves, they are always enjoyed by our family. For quite some time, I’ve wanted to make a Trifle, but one, didn’t have the dish and two, didn’t really have a reason to. However, when given the task to create a recipe for Memorial Day in partnership with Voortman Bakery, I jumped at the opportunity to make a trifle!

Red White and Blue Mixed Berry Trifle Recipe

Since we love berries so much in our home and Memorial Day is just around the corner (with 4th of July not that far behind), I decided to make a Red White and Blue Mixed Berry Trifle. It turned out beautifully and was delicious too! It will surely be a crowd pleaser when we’re able to have family and friends over again in the future. Plus, I snacked on the Voortman Bakery Summer Berry Wafers while I was preparing and those were good too. Let’s check out the recipe!

RED WHITE AND BLUE MIXED BERRY TRIFLE RECIPE

INGREDIENTS

  • 1 cup Smucker’s seedless red raspberry jam
  • 2 pounds strawberries, hulled and cut into 1/4-inch slices
  • 1 pint raspberries
  • 1 pint blackberries
  • 1 pint blueberries
  • 2 cups heavy whipping cream, cold
  • 16 ounces Philadelphia brand cream cheese, at room temperature
  • 2 cups cups confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 2 packages Voortman Bakery Summer Berry Wafers
  • Fresh mint, for garnish (optional)

INSTRUCTIONS

1 – Set aside a mixture of berries to use as a topping for your trifle. **Note: These won’t be added until the next day, so feel free to keep them in the containers until you need them.

2 – Heat the raspberry jam in a microwave safe 1 minute 30 seconds, or until hot and liquified. Pour the heated jam over the fresh berries in a large bowl and toss to coat. Let this mixture sit while you prepare the rest of your recipe, stirring occasionally.

3 – In a large bowl, whip the heavy cream until stiff peaks form. I used an electric mixer to whip mine. Set aside.

4 – Beat in the vanilla and then beat in a third of the whipped cream.

5 – In another large bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy. Using a large rubber spatula, fold in the rest of the whipped cream until well combined.

6 – Cover the bottom of your trifle dish with a layer of Voortman Bakery Summer Berry Wafers. You can even break it into pieces if you need to.

7 – Add 1/3 of the berry mixture (including some of the juices) and add 1/3 of your whipped cream mixture.

8 – Alternate your layers, ending with the cream cheese mixture on top. Refrigerate your trifle for at least 8 hours, or overnight, before serving.

9 – Once it has chilled for at least 8 hours or overnight, add a mixture of your fresh berries to the top of the whipped cream cheese topping. Be sure to leave a 1-inch border around the edge showing the fruit beneath. Garnish with fresh mint sprigs to your dish. Serve and enjoy!
