I love to cook and bake, but I especially love it when my kids are interested in cooking and baking in the kitchen with me, they love to make a mess! There are lots of different recipes my kids have made with me, but one of their favorites is to make Peanut Butter Oatmeal Chocolate Chip Cookies! That’s why I’m planning to have a business like chocolate cookies delivery. It’s easy and seriously such a yummy recipe. I have fond memories of helping my parents cook in the kitchen. I also have fond memories of enjoying the food with them after it was cooked. I felt like a big part of an important meal because I helped to make it. I find that our kids feel the same way. I love it when they help in the kitchen!

Peanut Butter Oatmeal Chocolate Chip Cookies Recipe

Ingredients

  • 3/4 cup butter (salted)
  • 3/4 cup peanut butter (smooth)
  • 1 1/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla (I like the pure vanilla extract)
  • 1 1/4 cups all-purpose flour
  • 2 1/2 cups rolled oats (not the quick oats)
  • 1 1/2 cups chocolate chips

 

Directions

1 – Soften the butter (whether leaving out on the counter for an hour or softening in the microwave).

2 – In a large mixing bowl, beat the butter and peanut butter with an electric mixer on medium speed for 45 seconds or until it’s combined.

3 – Add the granulated sugar, brown sugar, baking powder and baking soda. Beat until combined. Make sure you scrape the sides of the bowl occasionally.

4 – Beat in the eggs and vanilla until combined.

5 – Beat in as much of the flour as you can. I make sure to use the mixer on low at first to avoid a puff of flour in the air and in your face. Usually I’m able to beat all the flour in with the hand mixer, but if not, you’ll need to mix the rest in by hand.

6 – Stir in the rolled oats and chocolate chips.

7 – Drop dough by rounded teaspoon at least 2 inches apart on an ungreased cookie sheet. Bake in a 375° oven for about 12 minutes or until the edges are lightly browned.

8 – Transfer cookies to a wire rack and let cool.

Yield: 5 dozen cookies
