Chili Mac Skillet Recipe
One of the recipes that I make for our family that has become a favorite is the Chili Mac Skillet Recipe. Not only is it easy to make, but the kids can even help make it. Plus, it is really yummy and a budget-friendly meal! It’s a yummy combination of noodles, meat, beans, corn, tomatoes and cheese – and of course chili powder. You can serve it with more cheese if you want and sour cream or salsa. Now let’s head to the recipe.
INGREDIENTS
- Small elbow macaroni pasta (1 lb or 16 oz box)
- 3 pounds ground beef
- 1 small onion, chopped
- 1 can kidney beans, undrained
- 1 can corn, undrained
- 1 can Ranch Style beans
- 2 cans tomato sauce (8 oz each) (you can replace the tomato sauce with 1 can tomato paste mixed with 1 can water)
- 1 can diced green chiles
- 1 can RO-TEL diced tomatoes with green chilies
- 1 can diced tomatoes
- 1 cup water
- 5 tsp chili powder
- 2 tsp garlic salt
- lots of shredded cheddar cheese
DIRECTIONS
1 – Brown onion and ground beef. Drain off fat.
2 – Stir in beans, undrained kidney beans, undrained tomatoes, tomato sauce, uncooked macaroni, water, diced green chiles, chili powder and garlic salt. Bring to boiling, stirring occasionally.
3 – Reduce heat. Simmer, covered, about 20 minutes or until macaroni is tender, stirring often.
4 – Sprinkle with cheese. Cover and heat for about 2 minutes more or until cheese is melted.
Makes 6 servings. Serve with additional cheese and sour cream.

I haven’t made it but this is just the kind of dish that goes over well at our place. I like that it’s a cinch to make too.
I’ve had something very similar to chili mac skillet when I was a kid. The corn is a new thing for me, however, I love corn! And I love how the cheese just brings everything together. This will be great for pre-made meals or leftovers to take a break from cooking for a few days.
Looks awesome! Will try it.
