I love to cook, but I love it even better when everyone in our family enjoys the meal! Not to mention when it’s easy and quick to make. This Christmas, my husband surprised me with an Instant Pot (well, it is the Best Buy Insignia brand but it works very much the same way). There are a number of brands of programmable all in one cookers and no matter which one you have, the recipes should be similar. It really is awesome! We’ve already made two dinners and a cake in it and LOVE it! I can’t wait to see what else we make! Today, I’m gonna share an Instant Pot Chili Recipe with you. It is really good!

Instant Pot Chili Recipe – 8 Quart Pot

Ingredients

  • 2 Pounds Ground Beef
  • Leftover Steak or Beef (we used leftover Prime Rib – about 2 cups)
  • 1 Medium Onion, Diced
  • 4 Tablespoons Chili Powder
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Cumin
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 4 Cans Chili Beans (14 oz), Do not drain
  • 4 Cans Ranch Style (Pinto) Beans (14 oz), Do not drain
  • 1 Can Kernel Corn (14 oz), Do not drain
  • 2 Cans (6 oz) Tomato Sauce
  • 3 Cups Beef Broth (made with beef bouillon and water)
  • 2 Tablespoons Cornstarch
  • 2 Tablespoons Water

Toppings

  • Tortilla Chips
  • Shredded Cheese
  • Sour Cream

Directions

1 – Turn Instant Pot to sear/saute and add the ground beef and onion.

2 – Chop the leftover steak or beef, if you have any you’d like to add to the chili.

3 – Once the meat is no longer pink, add the chopped steak or beef to the pot.

4 – Turn the Instant Pot off and add the remaining ingredients. Stir to combine.

5 – Add the spices and beef broth. Stir.

6 – Set the instant pot to Bean/Chili (on other pressure cooks – Soup/Stew). You can also cook hot pot on your instant pot.

7 – Allow the pressure to release naturally for 10 minutes, then quick release.

8 – In a small bowl mix together the cornstarch and water until smooth and immediately whisk into hot chili.  Allow to thicken for 5 minutes before serving.

I highly recommend this Instant Pot Chili Recipe! It was super quick and easy to make – not to mention delicious!
