4th of July Whoopie Pie (by Wilton)

When I attended the Wilton Mom ReTreat, we had the opportunity to sample a yummy dessert – the 4th of July Whoopie Pie.  It was so good!!!  Here is the recipe (courtesy of Wilton) whether you want to make it for the next 4th of July or another Patriotic Holiday.  Heck, you could even just make it as a summer dessert.  Enjoy!

Fourth of July Whoopie Pie

2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter, softened
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup milk
1 tablespoon Wilton Red Jimmies
1 tablespoon Wilton Blue Jimmies
Whoopie Pie Filling (recipe follows)

P.S. In case you are like me and have no idea what Jimmies are, I’ll tell ya. Jimmies are basically sprinkles. You learn a new thing every day. 🙂

Preheat oven to 350 degrees Fahrenheit. Lightly spray Wilton Whoopie Pie Pan (or cookie sheet) with nonstick cooking spray.

In medium bowl, combine flour, baking powder, and salt; set aside. In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; beat until well combined. Add flour mixture to butter mixture and mix on low speed. When dry ingredients are almost incorporated, stop the mixer and add the milk and jimmies. Continue to mix on low speed until batter is smooth. If using Whoopie Pie Pan, spoon 2 tablespoons of batter into each cavity. If using cookie sheet, drop heaping tablespoons of batter 2 inches apart.

Bake 11-13 minutes or until the top of the cake springs back when touched. Allow the cakes to cool in pan 8 minutes before removing; cool completely before filling.

To assemble, spread a cake with Whoopie Pie filling and sandwich with another cake. Roll sides of Whoopie Pie in Wilton Red and Blue Jimmies, mini chocolate chips, or nuts, or garnish with fresh raspberries and/or blueberries.

Makes 12 Whoopie Pies.

Whoopie Pie Filling

6 tablespoons butter, softened
2 cups confectioners’ sugar, sifted
1/8 teaspoon salt
1 jar (about 7 oz) marshmallow creme
1 teaspoon vanilla extract

In large bowl, beat butter with electric mixer until creamy. Add sugar and salt; mix well. Add marshmallow creme and vanilla; blend well. Use immediately to fill whoopie pies or refrigerate covered up to 1 week. Bring back to room temperature and lightly beat before using.

Makes about 2 cups of filling, enough to fill 12 whoopie pies.

  4. I hadn’t seen this post when I said I made Whoopie Pies in your Aloha Friday post. This is the pan I have (Gotta LOVE Wilton!!) – but I made traditional chocolate with vanilla filling. They taste SO good and they pop right out of the pan. I may have to try this recipe some time.
