Cooking With The Mommy-Files – Taco Soup

OK, so this isn’t a genuine Mexican dish, but I would classify this recipe under the Mexican Recipe Category.  There have been a few days this month where we had Mexican food leftovers, went on a date, or had food from the Taco Truck.  So, I’m filling in a few of my recipes with some of my own favorite Mexican dishes.  Taco Soup is easy to make and tasty!

TACO SOUP

Ingredients:

-1 lb Ground beef
– 1 onion, chopped
– Taco Bell Taco seasoning mix (or other brand)
– Can of Kidney beans (reg sized can)
– Can of Diced tomatoes
– Can of Cream corn
– Can of Diced green chiles
– Tortilla chips
– Toppings: Sour Cream, Cheese, Salsa

Directions:

Brown ground beef with chopped onion. Add taco seasoning mix and stir.

Add can of kidney beans (undrained), diced tomatoes (undrained), cream corn (undrained), and diced green chiles (undrained). Stir and simmer for 30 minutes or heated through.

Crush tortilla chips in bottom of bowl. Pour soup over tortilla chips. Top with cheese, sour cream, and salsa (if desired).

Serve and enjoy!

    I make a similar recipe but with ground turkey. It a meal like this with the seasonings the family doesn’t know the difference. My husband is a beef man but I try to make things a little healthier so he never gets straight gr beef anymore. I split a lb of turkey with beef and freeze that way so it is ready to go. BTW, my girls beg for this soup and they are 3 & 4 years old.

  11. Yummy! I love any sort of Mexican soup!!!! I make one with the black bean soup stock from Trader Joe’s and add tons of veggies, chicken, and drained rotel tomatoes. Cheese and sour cream on top. It’s amazing!

    I am making this for dinner, but I am doing regular corn instead of creamed, and I am adding black beans along with the kidney beans. Hope it turns out 🙂
