Cooking With The Mommy-Files: Pile-It-On Tostadas

I LOVE tostadas!  They are REALLY good!  Plus, everyone in the family loves them!  Double plus, they are really EASY and QUICK to make!  Here’s what you need:

PILE-IT-ON TOSTADAS

– Tostada Shells
– Shredded chicken
– Olive oil
– Diced green chiles
– Refried Beans
– Guacamole
– Sour cream
– Salsa
– Cheese
– Lime

Cook chicken in olive oil. Cool. Shred chicken. Add back to pan and add a little more olive oil for moisture. Add diced green chiles and cook for a few minutes.

Heat refried beans.

On tostada shell, spread refried beans.

Add shredded chicken mixture.

Dollop sour cream and spread. Repeat with Guacamole and Salsa or Pico de Gallo.

Sprinkle cheese (I like the Mexican 4 cheese blend).

Squeeze lime juice.

Eat. So good! Easy to make! Great for a budget! Family loves!

  1. I love Tostadas, but I never order them at a restaurant because normally the bottom is all soggy from being on the plate. Anyways I need to do this at home. My girls love mexican food and I think they would love seeing all the yummyness stacked in front of them 🙂 Thanks for the reminder.

  3. These look so good…. all these recipes are making me want Mexican food so bad! But with this head cold, I can hardly taste anything. I suppose the spicy food might just clean out my sinuses! 🙂
