Cooking With The Mommy-Files: Yummy Quesadillas

We are continuing with our month of Mexican food on The Mommy-Files.  We have had a Mexican dish of some sort almost every day so far this month.  I’ve switched it up for the kids a few times, including DiGiorno Pizza, Spaghetti, and yes…classic Mac & Cheese.  But I’ve found that they really love plain quesadillas.  So, for the nights we made simple Quesadillas for the boys, I dressed ours up a little bit more.

George really liked Quesadillas cooked this way!  Success!

Yummy Quesadillas

– Flour tortillas
– Diced green chiles
– Shredded chicken
– Pico de gallo
– Mexican 4 Cheese Blend

I cooked chicken in olive oil and then shredded it.

On a flour tortilla, I spread refried beans, diced green chiles, pico de gallo, and then cheese and cooked them up.

You can also add olives, black beans, and spanish rice.

They were really good and EASY to make!

    Oh Quesadillas sound yummy! You could also make these with corn or rice tortillas.
