Cooking With The Mommy-Files – Fish Tacos

These are super yummy!  Unfortunately, I didn’t take pictures and I haven’t uploaded the video yet.  Video to come soon!

INGREDIENTS:

1 pound Skinless Cod
2 tbsp butter, melted
1/4 tsp ground cumin
1/4 tsp garlic powder
2 tbsp mayonnaise
2 tbsp sour cream
1 tsp fresh lime juice
1 1/2 cups sliced cabbage (or slaw salad mix)
6-inch flour tortillas

Thaw fish, if frozen. Rinse fish and pat dry. Cut fish crosswise into bite-size slices. Place fish in single layer in greased shallow dish.

Combine butter, cumin, and garlic powder. Brush over the fish.

Bake fish in a 450 degree oven for 4 to 6 minutes.

Meanwhile, stir together mayonnaise, sour cream, and lime juice. Add shredded cabbage; toss to coat.

Heat tortillas in microwave-safe plastic wrap for 45 seconds.

Spoon salad mixture onto each tortilla and add fish.

Serve and enjoy!

  1. Cod is my favorite fish and have never thought of making taco’s with it.I will have
to try this recipe.Usually I just bake Cod in the oven.My husband gets upset when I
cook fish,he says I stink up the house so I found a way to get around it.I just marinate it!

  2. I’m glad you posted this recipe. I love fish but I’ve been seriously scared to try fish on a taco. It just doesn’t seem like it would taste very good at all. I trust your opinion though & I thing I’m going to give them a try. Thanks for the “support”.

  3. When I went out to Lajolla, California to visit a friend, I had my first fish taco and I loved it! Oh man it was so good. I think what made it so great was the fish was so fresh. We need to start that trend here in North Florida..lol. 🙂
