The Fall is here and I love everything about it. From the changing color of leaves to the cooler weather to the amazing smells of meals and goodies cooking in the kitchen, I love it all! With the Fall season also comes a new variety of yummy wafers and cookies from Voortman Bakery. Thanks to Voortman Bakery, I got to sample their Apple Crisp Wafers, Pumpkin Spice Wafers and Pumpkin Spice Cookies. They are delicious!

I love wafers, but was really excited to try out the Voortman Pumpkin Spice Cookies and even use them in a recipe I created! HISTORY OF VOORTMAN BAKERY

I like to learn about the history behind the brands that I love! Voortman Cookies began in 1951 when two young Dutch brothers, William and Harry Voortman, opened their first bakery in Hamilton, Ontario. It took five years of dedicated baking and hard work before a Canadian grocery chain agreed to give Voortman Cookies shelf space in their stores!

PUMPKIN PIE BITES RECIPE

During the Fall, I start to count down the days until Thanksgiving is here. One of my favorite things to eat at Thanksgiving (other than the turkey and homemade mashed potatoes with gravy) is homemade pumpkin pie. Well, how does it sound to have Pumpkin Pie Bites? It is as good as it sounds!

INGREDIENTS

Crust:

  • 1 package of Voortman Bakery Pumpkin Spice Cookies
  • 3 tbsp sugar
  • 3 tbsp butter

Filling:

  • 3/4 cups granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 Large eggs
  • 1 can LIBBY’S® 100% Pure Pumpkin (15 oz)
  • 1 can NESTLÉ® CARNATION® Evaporated Milk (12 fl oz)

DIRECTIONS

1 – Preheat oven to 350°F and spray mini muffin pan with baking spray.

2 – Prepare crust by crushing Voortman Bakery Pumpkin Spice Cookies in a small bowl.

3 – Melt 3 tbsp butter. Combine butter and 3 tbsp sugar with the crushed cookies.

4 – Mix together to get a crumbly, moist mixture.

5 – Place crust in oven for 5 minutes. Remove and cool.

6 – Now we’ll prepare the filling. Start by combining the sugar, cinnamon, salt, ginger and cloves in a small bowl.

7 – Beat the eggs in a bowl.

8 – Combine the sugar-spice mixture with the pumpkin.

9 – Gradually stir in evaporated milk.

10 – Once mixed, scoop mixture into mini baking pan (on top of crust). Do not overfill to avoid spillage and burning.

11 – Bake in oven for 25 minutes or until toothpick inserted comes out clean.

12 – Cool on cooling rack for 1 hour. Top with whipped cream and crumbled cookies. Enjoy!
