Easy Chicken and Rice Casserole Recipe

In our family, we eat a lot of chicken. Not only does it taste good, but I can often times find it on sale at the grocery store. One of the recipes our kids have really come to love is Easy Chicken and Rice Casserole Recipe. Not only is it yummy and easy, but it’s a quick one too! I mean, that’s always a plus, right? We hope you enjoy this recipe as much as we do.

Easy Chicken and Rice Casserole Recipe

Ingredients

  • 2 pounds of Chicken Breasts or Chicken Tenderloins, chopped
  • 2 tbsp Sesame Seed Oil
  • 2 cans Cream of Chicken Soup
  • 3 cups Chicken Broth (I like to make with Chicken Bouillon and water)
  • 3/4 tsp Paprika
  • 1/2 tsp Pepper
  • 3 cups uncooked MINUTE original rice
  • 3 cups Broccoli flowerets
  • 3 cups grated Medium Cheddar Cheese (you can switch it up to Mild or Sharp depending on your taste + you can add more or less cheese, but we like a lot of cheese)

Directions

1 – Chop chicken and set to the side.

2 – Heat oil in pot. I like to use a pot to prevent oil spatters.

3 – Add chicken to oil and cook until done.

4 – Remove chicken, draining oil, and set to the side.

5 – Prepare the chicken broth. I follow the package directions, which has you use 2 cups of water per cube. You will have a cup of broth remaining, but you may want to use it if your casserole needs more moisture. We used all of the broth the last time we prepared this meal.

6 – Chop or break up the broccoli into pieces. Set to the side.

7 – Mix together soup and broth with a whisk. Add paprika and pepper. Heat to a boil.

8 – Stir in rice, broccoli, chicken and cheese. Season with additional paprika and pepper.

9 – Cover and cook over low heat for 7 minutes or until done. Serve immediately after heated and enjoy!
