Porcupine Meatballs Recipe with Ingredients from Smart & Final #sfsmarties
My boys love meatballs and this one is a family favorite. Plus, it’s budget friendly and easy to make! To make Porcupine Meatballs, I purchased the ingredients from Smart & Final. I love shopping at Smart & Final because I find quality food items at affordable prices! For this meatballs recipe, I purchased Ground Beef and Cheese, as well as Ice Cream – all of which will be on sale at Smart & Final this week.
Ground Beef will be on sale this week for $1.99/lb.
First Street Shredded Cheese (select varieties) will be on sale this week for $4.99 (2 lb bag).
We purchased a container of the First Street Mint N Chip Ice Cream for dessert. Yummy!!!

1 lb ground beef
3/4 cup uncooked long grain rice
1 slightly beaten egg
1 tablespoon parsley (or 2 tablespoons dried parsley)
3 tbsp dried minced onion
1/2 teaspoon salt
1/8 teaspoon pepper
1 (10 3/4 oz) can tomato soup
1/2 cup water
1 teaspoon Worcestershire Sauce
1/2 cup shredded cheddar cheese
Combine the meat, rice, egg, parsley, onion, salt, pepper, cheese, and 1/4 can tomato soup. Mix it – I find it’s easiest to mix with my hands in a bowl. Mix and shape into 20 small balls. Place in skillet. Mix remaining tomato soup, water, and Worcestershire Sauce and pour over meatballs. Bring to a boil. Reduce heat; cover and simmer for 35-40 minutes, stirring often. Serve meatballs and sauce over white rice. Enjoy!
