Rolo Cookies

For the cookie exchange I hosted this year with my stepmom, I brought Rolo Cookies.  They were a hit!  Many of my friends and family members have also asked for the recipe, so I thought I would include it on The Mommy-Files.  They are super easy to make, taste really good, and ship well!

INGREDIENTS

2 1/2 cups flour
1 tsp baking soda
3/4 cup unsweetened cocoa
1 cup butter, softened to room temperature
1 cup brown sugar
2 tsp vanilla
1 cup granulated sugar
2 eggs
10 rolls of Rolo candies, unwrapped

DIRECTIONS

Combine sugar and butter together and cream.

Add all other ingredients, except Rolos.

It may be easier to combine all other ingredients with clean hands.

Roll the Rolo inside a ball of dough so that it cannot be seen.

Bake at 350 degrees on ungreased cookie sheet for 7 to 10 minutes.

Let cool before serving.

Serve with milk and enjoy!!!

  1. Aaaaah! Someone brought these to the annual church Christmas Dinner and I could not figure out what was inside! I knew it was caramel, but better than just plain old caramel. Mystery solved! They were delicious!

  2. I haven’t had these in years… they are so good because you not only get the warm caramel, you get the melted chocolate mixed with the delicious cookie. I’ll have to remember this recipe for next year. I made 7 different kinds this year, so I’ll have to give up one kind if I add this one. TeeHee
