My family loves to eat Tacos, Quesadillas, Burritos, and Enchilada Casserole. I almost always have a package of tortillas in my house. Thanks to Mom Fuse, I had the opportunity to review some great products from La Tortilla Factory! I received the Smart & Delicious EVOO SoftWraps made with Extra Virgin Olive Oil (Multi Grain) and the Hand Made Style Corn Tortillasa (made with white corn and wheat). They were so good!!! I love the texture and the flavor of the tortillas. I will definitely purchase these again.
La Tortilla Factory’s Smary & Delicious EVOO SoftWraps are a great way to make sure your family eats well – especially during the summer months. Flavors include Tomato Basil, Whole Wheat, Multi Grain, and Rye. Each wrap is only 90-100 calories, which won’t damage your diet and will fit in the whole grains you need. You’ll find 13 grams of whole grains in the Multi Grain variety and 22 grams in the Whole Wheat variety.

So why buy La Tortilla Factory over other brands in the store? La Tortilla Factory products have more fiber with fewer carbs and calories than traditional breads and tortillas. Plus, La Tortilla Factory doesn’t ues any lard or trans fats in any of its products!

The whole family will also love La Tortilla Factory’s brand new Hand Made Style Corn Tortillas (available in Yellow Corn, White Corn, and Chipotle flavors). They have a perfect blend of corn and wheat and are soft and flexible – great for grilled chicken, fish, or veggies. You can purchase them for $1.99 to $2.49 for an 8-tortilla pack. These tortillas contain 90 calories, 14 grams of whole grains, no hydrogenated oils, and 0 grams trans fat.

Here is a great recipe compliments of La Tortilla Factory:

Grilled Mushroom and Swiss Cheese Quesadilla
Serves 2
Preparation time 8 minutes Cooking time: 10 minutes

1 tablespoon olive oil
2 cups crimini or white mushroom, brushed with paper towel to remove dirt
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 cup small dices zucchini
½ cup small diced tomatoes
½ cup shredded Swiss cheese
2-4 La Tortilla Factory tortillas
½ cup guacamole, store-bought or home made, optional

Preheat the griller or broiler, sprinkle 1 tablespoon plus olive oil, salt and pepper to the mushroom, and cook for 1- 2 minutes or until lightly caramelized. If using broiler, spread the mushroom on a sheet pan and cook in the broiler for about 5-7 minutes or until brown.

Transfer to a bowl and cooled, then thinly sliced

On a same griller or a skillet, place a tortilla on a the griller of the skillet, place a tortilla, spread about 2 tablespoons cooked mushrooms, 1 tablespoon of zucchini, tomatoes and 2 tablespoons of cheese and fold into half. Cook over medium-low heat for 1 minute or until the cheese is melted or the tortilla is lightly brown. Flip the tortilla to other side and cook to light brown.

Continue to cook the remaining tortilla. Serve with guacamole
