In our home, dinner is something everyone looks forward to. In fact, each evening, at least half of our kids will come into the kitchen while I’m cooking and ask what we’re having for dinner. I love it when they get excited about what I’m making for dinner and I make sure I note those recipes so I can make them again in the future. One that everyone likes in our home is Taco Soup. It’s not only easy to make, but it’s yummy too!

I love that you don’t need any special kitchen cookware or appliances when it comes to making Taco Soup. EASY TACO SOUP RECIPE

INGREDIENTS:

  • 2 pounds ground beef
  • 1 onion, chopped
  • 2 packages taco seasoning
  • 2 cans (28 oz each) stewed tomatoes, undrained
  • 2 cans (8 oz each) tomato sauce
  • 2 cans cream style corn, undrained
  • 2 cans kidney beans, undrained
  • 2 small cans of diced green chiles (I like the mild flavor)

TOPPINGS:

  • Tortilla chips
  • Sour Cream
  • Cheese
  • Salsa

DIRECTIONS:

1 – Chop the onion.

2 – Sauté the onion and ground beef together. Drain off the grease.

3 – Stir in the taco seasoning with the meat.

4 – Mix in all other ingredients, except for the toppings. Stir together.

5 – Bring to a boil and cover and simmer for 20 minutes.

6 – Now it’s time to serve it up and add toppings! I like to start with crunching up the tortilla chips and putting them in the bottom of my bowl. Then I serve soup over the chips. After that, I add sour cream (and even salsa if you’d like). Top that off with some shredded Mexican cheese! Enjoy!!

    I do not eat a lot of things because my pallet is underdeveloped. “My thoughts” however my husband who does most of the cooking will find this recipe rather interesting because he is always looking for something new to make. Question can you do it in a crockpot?
