In our house, we have 6 kids and sometimes finding a meal that everyone likes can be a challenge. When I do prepare a meal that everyone likes (and wants again), it is definitely a win! I love to cook and especially love it when our kids want to help in the kitchen. Recently, my son and I worked together to create a Chicken and Rice Soft Tacos Recipe and EVERYONE in our home loved it! In fact, the kids wanted to know when I was going to make it again. Not only is it a great thing to prepare a meal that everyone likes and that our kids want to help make, but it is also a plus to have enough time to prepare a healthy and delicious meal!

Families today are increasingly strapped for time, leaving us as parents to settle for a quick fix when it comes to meals. However, research shows that children who cook and eat with their families tend to consume healthier foods, have healthier eating habits as adults, and have higher academic achievement. Inspiring families to spend more time together in the kitchen, the UNCLE BEN’S® BEN’S BEGINNERS™ Cooking Contest – now in its sixth year – has teamed up with Tiffani Thiessen, mom, actress, cook and lifestyle expert.

EASY CHICKEN AND RICE SOFT TACOS RECIPE

Ingredients

  • 3 lbs Boneless, Skinless Chicken Breasts (thawed if previously frozen)
  • Mild Original Salsa (or any flavor you’d like – enough to cover the chicken in the crockpot)
  • Flour Tortillas (soft taco size)
  • Shredded Cheese
  • Shredded Lettuce
  • UNCLE BEN’S® Ready Rice (Roasted Chicken with Carrots and Herb flavor)

Directions

1 – Spread a layer of Mild Original Salsa in the bottom of the crockpot.

2 – Cut chicken breasts in half and place in crockpot.

3 – Cover with Mild Original Salsa.

4 – Add another layer of chicken breasts and cover with salsa.

5 – Cover with lid and cook for 5 1/2 hours on HIGH Heat.

6 – Shred chicken with 2 forks and mix in crockpot with salsa.

7 – Drain chicken in strainer, removing excess liquid.

8 – Tear an opening in the UNCLE BEN’S® Ready Rice and heat in microwave for 90 seconds. Carefully remove from the microwave and pour into a bowl for easy serving.

9 – Heat flour tortillas in microwave on a paper plate. separated by paper towels. Heat for 10-15 seconds or until warm.

10 – Fill tortillas with shredded chicken, UNCLE BEN’S® Ready Rice, shredded lettuce, shredded cheese, and salsa.

This is definitely an easy and delicious meal to prepare, as well as one that our entire family enjoys! We’ll definitely be making the Easy Chicken and Rice Soft Tacos again soon!
