Can you believe that Easter is almost here?  When I was a little girl, PEEPS was one of my favorite Easter candies (other than chocolate of course).  As an adult, I still like snacking on PEEPS, as well as decorating with them.  With the inspiration of Wilton products and PEEPS candies, I created PEEP-A-BOO Easter Cupcakes.

I started with Duncan Hines® Limited Edition Spring Velvets Cake Mix.  Did you know that Duncan Hines® is the brand of cake mix recommended by Wilton Cake Decorating Instructors?  The Spring Velvets Cake Mix included one bag of Pink Velvet mix and one bag of Yellow Velvet mix.  All I needed were eggs, softened butter and water, as well as my handy dandy Kitchen Aid Mixer.

Once the cake mixes were ready, it was time to move some of the cake mix to the Disposable Cake Decorating Bags.  I couldn’t believe how much easier it was to fill the muffin cups, especially with the special cupcakes I was making.  I would be making Two-Tone Cupcakes and was so excited to see how they’d turn out!

This was my first time using the Wilton Two-Tone Cupcake Pan and I loved it!  I will definitely be using it again in the future!  I did some cupcakes with a pink center / yellow outside and then others with a yellow center / pink outside.  The inserts and disposable decorating bags made the process so easy!!!  I used the Wilton Watercolor Baking Cups, which were so pretty and perfect for Easter!

I stuck the cupcake pans in the oven and away they baked!  I was anticipating taking them out of the oven and seeing what they would look like.  But first I had to let them cool and then I could decorate them.

For the PEEP-A-BOO Easter Cupcakes, I used pink PEEPS.  Before placing the PEEP in the center of the cupcake, I cut it in half.  Then I used the Violet Ready-to-Decorate Icing to surround and hide the PEEP.

Once the top of the cupcake was covered with icing, I added the Colorful Egg Sprinkle Mix.  The green grass-like sprinkles and eggs added that perfect final Spring touch to complete our PEEP-A-BOO Easter Cupcakes!!!

    I need to pick up some wilson baking supplies. 🙁 I made these adorable cakes inside ice cream cones but the frosting was so blah because all I had was a butterknife.
