Johnsonville Sausage Fiesta Bites Recipe

With Frank and I starting work as soon as we wake up in the morning and then me getting the kids out the door to school, I am often left with little time to prepare a cooked meal in the morning.  What better way than to prepare a delicious and easy meal ahead of time and freeze for later reheating!  As a part of the Johnsonville Delicious Dish Blogger Panel, I was given the task of incorporating 2 secret ingredients into a recipe – Johnsonville Breakfast Sausage and tortillas.  Let me introduce you to the Johnsonville Sausage Fiesta Bites Recipe.

Johnsonville Sausage Fiesta Bites Recipe

Ingredients:

– Mini Muffin Pan
– Cooking Spray
– Flour Tortillas
– Star-shaped cookie cutter
– 2 Eggs
– Johnsonville Breakfast Sausage Links
– Green Enchilada Sauce
– Mexican Cheese, shredded
– Butter, sliced into squares
– Toothpicks

Directions:

1 – Preheat oven to 350° F.

2 – Cut flour tortillas into star shapes using a cookie cutter.

3 – Coat cups of mini muffin pan with cooking spray.

4 – Place one tortilla star into each cup.

5 – Spoon 1 tsp of Green Enchilada Sauce into each star.

6 – Mix 2 eggs with a fork in a bowl.

7 – Spoon egg mixture into each baking cup.

8 – Slice Johnsonville Breakfast Sausage links with a knife and place one in each cup.

9 – Sprinkle cheese into each cup.

10 – Fold corners of star so they overlap and stick a toothpick with butter into the corners so it holds them in place.

11 – Place mini muffin pan on cookie sheet to prevent spillage.

12 – Bake in 350° oven for 30 minutes or until egg mixture is cooked.

13 – Let cool for 5 minutes.

14 – Serve and enjoy!

**Note: These can be prepared and frozen to be reheated for future meals.**
