I’m looking over a four leaf clover that I overlooked before.”  Every time I think of St. Patrick’s Day, I remember singing that song as a kid.  It’s hard to believe that March is here and St. Patrick’s Day is just around the corner!

When I think of St. Patrick’s Day, I think of four leaf clovers, green decorations, shamrocks, leprechauns, and the classic Corned Beef and Cabbage Meal that I prepare for my family every year.  My boys love it and call it the “pink meat.”  It’s a meal that I know they’ll eat a lot of!  You can find all of the ingredients for your Classic St. Patrick’s Day Corned Beef and Cabbage Meal at your local Smart & Final.

When I headed to Smart & Final, I picked up the Corned Beef, Red Potatoes, Cabbage, Onions, Carrots, Black Peppercorns, Bay Leaves and some other ingredients for a St. Patty’s Day craft we’re gonna be making for the holiday!

ST. PATRICK’S DAY CLASSIC CORNED BEEF & CABBAGE DINNER

INGREDIENTS:

–       1 Corned Beef Brisket with Seasonings
–       Pot of Water
–       1 ½ tsp black peppercorns
–       4 bay leaves
–       1 ½ onions
–       1 cabbage
–       8 red potatoes
–       20 baby carrots (or more if you’d like more)

DIRECTIONS:

1.  Drain the blood and juices off the Corned Beef Brisket.  Place the Corned Beef Brisket in a large pot.  Add the packet of seasonings if your Corned Beef Brisket comes with it.  If not, don’t worry because you will get plenty of flavor with the spices we add in this recipe.

2.  Cover the brisket in the pot with water.  Add the peppercorns and bay leaves.

3.  Cook on HIGH until boiling.  Once boiling, turn down to SIMMER.  Cover and cook for 3 hours (or until the brisket is tender).

4.  Add baby carrots, quartered onion and red potatoes.  Cook for 20 minutes.

5.  Cut the cabbage in quarters (so you have wedges).  Add to the pot and cook for 20 minutes.

6.  Decorate a platter with St. Patrick’s Day decor in preparation for your Classic Corned Beef & Cabbage dish.

7.  Once cooked, remove the corned beef brisket to a platter and serve with veggies.  I like to ladle the juices from the pot over the meat as well, and serve with mustard.

    I usually make this every year on St. Patty’s Day Too and this looks SO good. Mine is almost identical to yours except i don’t get the plate too fancy. It looks nice

    I sometimes make this on days as well as March 17th. I made it for visitors from the UK including an Irish member of the group. They all said ‘it’s wonderful—what is it?’ Only in America.
