Start the New Year with Delicious Egg and Sausage Muffin Cups

Our family loves Johnsonville Sausage.  In fact, just the other day I made breakfast, which included eggs, sausage and pancakes.  One of our children said, “This is the best sausage I’ve ever had!”  He was definitely right!

I had the opportunity to host a Johnsonville / Ore Ida Holiday Cooking Party and made the Amazing Egg and Sausage Muffin Cups, which were a hit with our family and friends!  I didn’t have all of the ingredients for the recipe, but made it a recipe I knew everyone would like.  And let me tell you, everyone loved them and they didn’t last very long at all!

INGREDIENTS

3 cups frozen hash browns, thawed

3 tablespoons melted butter

1/8 teaspoon salt

1/8 teaspoon pepper

14 links Johnsonville Original Breakfast Sausage Links

10 eggs

3 cups shredded cheese (Cheddar or Mexican blend cheeses are great)

DIRECTIONS

1 – Line muffin pans with paper baking cups.  Using the baking cups makes it a lot easier to remove the muffin cups without the possibility of sticking to the pan.

2 – In a bowl, combine the hash browns, butter, salt and pepper.  Press the mixture into the baking cups of the muffin pan.

3 – Bake at 400°F for 12 minutes or until lightly browned.

4 – Meanwhile, cook sausage according to package directions; cut into 1/2-inch pieces.  Divide sausage among the muffin cups.

5 – Combine the eggs and cheese.  Spoon the egg mixture over the sausage.

6 – Bake for 13-15 minutes or until eggs are set.

Yields 12 servings.
