Frank and I don’t always have the kids, and sometimes it’s challenging to cook up a healthy meal that tastes good.  Lean Cuisine is here to help solve that problem!  We recently headed to our Sam’s Club and picked up a Lean Cuisine Asian Flavors 6-Pack.  The 6-Pack had dishes in three different flavors, with two of each flavor.  The flavors included Sesame Chicken, Ginger Garlic Stir-Fry with Chicken, and Chicken Teriyaki Stir Fry.  The Lean Cuisine Asian Flavors 6-Pack at Sam’s Club retails for $11.25 – that’s less than $2.00 a meal!

To go with the Lean Cuisine Meals, I made a side dish – Easy Fried Rice.  It was so easy to make and really yummy!  Here is how you make it:

INGREDIENTS:

– 3 cups Cooked White Rice
– 2 Green Onions (about 1/4 cup chopped)
– 1 can Baby Corn (cut into small pieces)
– 1/3 cup Peas (canned, fresh, or frozen)
– 3 eggs
– 2 tablespoons vegetable oil
– Soy Sauce
– Sesame Oil
– Kosher Salt

DIRECTIONS:

1 – Heat oil in wok or large frying pan. On a side note, if you are using your wok often, purchasing a wok range is a sound and a convenient investment. Add cut up baby corn, chopped green onions and peas.  Stir constantly until heated through.

2 – Beat eggs and add soy sauce and sesame oil to taste.

3 – Add egg mixture to veggies and stir constantly until eggs are cooked through.

4 – Add 3 cups of cooked rice to the egg and veggie mixture and mix together.  Add soy sauce, sesame oil, and Kosher Salt to taste.  Allow rice to cook on bottom for about 5 minutes or until fried to your liking.  Mix the rice together.

5 – Serve with your favorite Lean Cuisine Asian Flavor Meal and enjoy!

The dishes were yummy and filling.  Not to mention they were super easy to make.  Life can get pretty busy when working from home and sometimes that leaves little time for cooking.  When that happens, I know I can rely on Lean Cuisines for a healthy and good tasting meal.  Thank you Lean Cuisine for making meal time for two a more enjoyable experience!
