Yummy Chicken Divan with Ingredients from Smart & Final #sfsmarties

I love to make casseroles and Chicken Divan is one of my favorites!  This week is the person time to buy the ingredients for Chicken Divan, since chicken will be on sale at your local Smart & Final.  First Street Chicken Leg Quarters in the Value Pack will be on sale for $0.79 per pound (from 10/3 – 10/9/12).  Other items for sale in this ad include: Fresh Strawberries ($2.99 for a 2 lb. package) and Eggo Waffles, selected varieties (10 count for $1.49).

Now for the Yummy Chicken Divan recipe!

YUMMY CHICKEN DIVAN

8 Chicken Leg Quarters (cooked and shredded)
1 Can Cream of Chicken Soup (10 3/4 oz)
1/2 can Chicken Broth
3/4 cup Mayonnaise
1 tbsp Lemon Juice
1 tsp Curry Powder
1 cup Cheddar Cheese, shredded
1 cup Monterey Jack Cheese, shredded
1 cup Swiss Cheese, shredded
3 cans Cut Green Beans, drained
1/2 can French Fried Onion Rings

– Place raw Chicken Leg Quarters in a pot with water.  Boil water and then cover.  Cook for about 15 minutes, or until meat is done on the inside.  Drain hot water and cover with cool water.  Pull the skin off and shred the chicken.

– Mix together Cream of Chicken, Mayonnaise, Chicken Broth, Lemon Juice, and Curry Powder with a metal whisk until somewhat smooth.  Add cheese to mixture and stir.  Mix together the chicken with the mixture.  Drain the green beans and add to the mixture.

– Sprinkle cheese on top.  Top with 1/2 can French Fried Onion Rings.

– Place in 350 degree oven and heat for 30 minutes.  Serve over rice or mashed potatoes and enjoy!

    I have been making chicken divan for years… this recipe is ALMOST like mine except for one key change that I think will make it soooooo much better. Instead of canned green beans, use fresh broccoli spears – par boil them and lay it over the layer of chicken…. then I put the soup mixture on top (double the curry powder) and the then cheese and breadcrumbs over that and bake for 40 min….. serve with rice…. deeeelish

    wow, I need to stop by and be your taste tester. When I was single and in college, I quickly learned that i needed to develop some cooking skills unless my diet was going to be fast food all the time. I’m adding this one to the list for later. i used to think winging it was the way to go! haha, but recipes uncomplicate things and make me feel like a better cook than I really am.

    I love chicken, and love cheese this looks like it would be to die for. I am always looking for new things to make for the family. I have slowly backed away from boxed meals and went with making almost everything from scratch. I go through a lot of flour a month now LOL.
