Porcupine Meatballs Recipe with Ingredients from Smart & Final #sfsmarties

My boys love meatballs and this one is a family favorite.  Plus, it’s budget friendly and easy to make!  To make Porcupine Meatballs, I purchased the ingredients from Smart & Final.  I love shopping at Smart & Final because I find quality food items at affordable prices!  For this meatballs recipe, I purchased Ground Beef and Cheese, as well as Ice Cream – all of which will be on sale at Smart & Final this week.

Ground Beef will be on sale this week for $1.99/lb.

First Street Shredded Cheese (select varieties) will be on sale this week for $4.99 (2 lb bag).

We purchased a container of the First Street Mint N Chip Ice Cream for dessert.  Yummy!!!

From September 5th through September 11th, First Street Ground Beef, 73% lean sold in the 5 lb chub, will be on sale for $1.99 per lb.  These items will also be on sale:

– First Street Shredded Cheese, selected varieties, 2 lb. $4.99 lb
– First Street Ice Cream
– First Street Vegetables
– First Street Dressing
– First Street Rice
– First Street Plates

– First Street Detergent

PORCUPINE MEATBALLS

1 lb ground beef
3/4 cup uncooked long grain rice
1 slightly beaten egg
1 tablespoon parsley (or 2 tablespoons dried parsley)
3 tbsp dried minced onion
1/2 teaspoon salt
1/8 teaspoon pepper
1 (10 3/4 oz) can tomato soup
1/2 cup water
1 teaspoon Worcestershire Sauce
1/2 cup shredded cheddar cheese

Combine the meat, rice, egg, parsley, onion, salt, pepper, cheese, and 1/4 can tomato soup.  Mix it – I find it’s easiest to mix with my hands in a bowl.  Mix and shape into 20 small balls. Place in skillet. Mix remaining tomato soup, water, and Worcestershire Sauce and pour over meatballs. Bring to a boil. Reduce heat; cover and simmer for 35-40 minutes, stirring often.  Serve meatballs and sauce over white rice. Enjoy!

    this recipe is almost exactly what i remember of one my mother made called “porcupine meatballs” also. i did not care for them while growing up but after seeing the picture and reading the recipe i had a huge sense memory and i can smell and taste them and am now craving them. however, i cannot email this to myself because there is no option of doing this and i do not have a facebook or pinterest, twitter, etc. can you email me this recipe at the email address above. would love to also make for my family….

    The ingredients list 1/2 cup cheddar cheese, but the directions don’t tell you how to use it, I’m going to place the meatballs on the rice with some of the sauce and top with the cheese.

    LOL from the title I thought maybe y’all ate porcupine in CA. Never had porcupine meat, bet it is nasty, but your meatballs and little setup looks so yummy. I am going to try these soon, I bet they would be a big hit with my husband and daughter.

    My mom made these all the time but used tomato sauce instead of soup. She also added a can of mini diced. Porcupine come from the rice looking little quils. :/ That is how it was explained as there was no ways we were eating ground Porcupine!
