Banana Nut Bread with NEW C&H Light: Sugar & Stevia Blend

BANANA NUT BREAD

2 cups Flour
1 1/2 teaspoons Baking Powder
1/4 teaspoon Baking Soda
1/2 teaspoon Ground Cinnamon
1/8 teaspoon Salt
1 egg
4 medium Bananas, mashed
1/2 cup C&H Light Sugar
1/4 cup Cooking Oil
1 cup Chopped Walnuts (or Pecans)

1. Grease the bottom and 1/2 inch up the sides of a loaf pan. Set aside. In a medium mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and 1/8 teaspoon Salt. Make a well in the center of dry mixture; set aside.

2. In another bowl, beat the egg. Combine the egg, mashed bananas, sugar, and cooking oil. Add the egg mixture to the dry mixture all at once. Stir just until moistened (batter should be lumpy). Fold in nuts

3. Spoon the batter into the loaf pan. Bake in a 350° oven for approximately 55 minutes (or until toothpick inserted comes out clean).  Cool in the pan for 10 minutes.  Remove loaf from pan and cool on a wire rack.  Wrap and store overnight before slicing.  Makes 1 loaf.

**If you want your bread a little sweeter, simply warm the bread and sprinkle the C&H Light: Sugar & Stevia Blend over the top of the loaf.**

    I haven’t tried this yet. I use stevia but sometimes it has an aftertaste I don’t like. When it’s blended with the C&H it should taste good.
