Do you and your family enjoy pasta?  How about lasagna?  Are you looking for a way to get some veggies into your family’s meal without them knowing it?  If so, you’ll definitely want to check out this Easy and Yummy Lasagna with Ragu Spaghetti Sauce and First Street Pasta.  Ragu Spaghetti Sauce and First Street Pasta will be on sale at Smart Final this week – starting May 30th through June 5th.

My family loves lasagna and they will also enjoy veggies, so the combination of pasta, sauce, and veggies is perfect!  For the parent trying to get veggies into his or her diet without the child knowing it, this recipe is perfect!

EASY MEAT & VEGGIE LASAGNA

– 1 box of First Street Lasagna Noodles
– Water
– Olive Oil
– 1 pound ground beef
– 2 jars of Ragu Meat Spaghetti Sauce
– 1 pound of Ricotta Cheese
– 1 1/2 pounds Mozzarella Cheese
– 2 cups shredded Parmesan Cheese
– 1 zucchini, shredded

Boil water and 2 tablespoons (or to your liking) Olive Oil in a pot.  Break Lasagna noodles in half and add to boiling water.  Cook according to package directions.  When done, drain noodles.

While water is coming to a boil, brown Ground Beef in another pot (big enough to add the 2 jars of spaghetti sauce).  Drain grease from cooked beef.  Add both jars of Ragu Spaghetti Sauce.  Grate Zucchini and add to sauce mixture.  Simmer until heated through.

In a 9×13 Pyrex dish, ladle enough of the sauce mixture to coat a thin layer in the bottom of the dish.  Add a layer of cooked lasagna noodles over the sauce mixture.  Ladle more sauce mixture to cover the layer of noodles.  Sprinkle Ricotta Cheese over the sauce mixture.  Sprinkle desired amount of shredded Mozzarella Cheese and Parmesan Cheese over the Ricotta Cheese.

On the final layer, ladle the sauce mixture over the lasagna noodles.  Sprinkle Mozzarella cheese over the sauce mixture.  Place the casserole dish in an oven set at 350°F.  Bake until cheese on top layer is melted.  Serve with a Tossed Green Salad and Garlic Bread!  Enjoy!
