Christmas Eve Dinner

Authored by Leandro Delgado

For as long as I can remember my mom has always had my dad’s family over for supper on Christmas Eve. Now that they are getting older, it’s a little much for my parents to try to have so many people over for dinner so I suggested we host the festivities at our house this year. I must admit, my reasons are a little selfish. My parent’s tradition has always been to serve oyster stew and salad. No one at my house is really a fan of oyster stew although we do like a good salad. I just felt like it would be a good idea to change the menu up a little bit! Now that I have satellitestarinternet.com/ I can look for recipes online. I haven’t told my mom we are changing the menu; I’m hoping she will be pleasantly surprised. Because we always have the traditional turkey dinner on Christmas Day, I’m thinking about having something fun like lasagna. It’s something that makes a lot and everyone likes—now I just need to find an easy recipe!
